Chana Masala

By Deanna On March 7, 2011 · 1 Comment · In Cooking, Dinner

Chana masala is an Indian dish made with garbanzo beans, tomatoes, onion, and spices.   This is the first Indian dish I’ve ever made, and it is also one of the easiest and most delicious dishes ever.

I have loved Indian food for a while, but I have been hesitant to cook it because frankly, I […]

By Mack On February 28, 2011 · Leave a Comment · In Cooking, Dinner

I have cholesterol issues, which I’ve been dealing with by eating very little meat in my daily diet. Typically if I eat meat at all it’s at dinner and usually within the range of 150mg of Cholesterol or less. For portion consideration a 4 oz boneless skinless chicken breast consists of about 80mg of Cholesterol.

Hungarian Lecho (Lecsó)

By Deanna On February 3, 2011 · 1 Comment · In Cooking, Dinner

Lecho is a Hungarian dish made with smoked sausage, tomatoes, and peppers.  My Dad would make this for us when I was growing up at home.   He was born in Hungary, and when he was just a little boy, he and his family fled the country as refugees during the Hungarian revolution in 1956.     They were lucky to […]

“6-Can” Soyrizo Vegetarian Chili

By Mack On January 14, 2011 · 4 Comments · In Cooking, Dinner, Lunch

Growing up I can recall many mornings when we had chorizo and eggs for breakfast. I was pretty young then, but I do remember loving chorizo. As I grew up I rarely had it in meals. I think it just never came up as an option or I forgot how much I enjoyed it, but […]

By Mack On December 20, 2010 · Leave a Comment · In Breakfast, Cooking, Lunch

I woke up this morning and had planned to just toast a bagel with some cream cheese, but was reading some online posts and a friend mentioned one of my favorite foods, Soyrizo!

I realized we had some Soyrizo in our fridge from a little while back and decided I’d make good use of it.

Veggie Everything Bagel Sandwich

By Mack On December 12, 2010 · 6 Comments · In Breakfast, Cooking, Lunch

We haven’t done enough lunch posts, so I’m glad to be able to toss in another simple lunch or even breakfast idea.

Yesterday, prior to running errands around town we stopped in at our neighborhood coffee shop, Central Coffee Tea & Spice, and had a mocha and a bagel sandwich. So that experience […]
